Preparation
- Wash the blueberries thoroughly and gently pat them dry with a paper towel.
- In a mixing bowl, combine the Greek yogurt with honey or maple syrup if you prefer your bites a little sweeter. Add the vanilla extract if you desire that extra zing!
- Using a silicone muffin tray or a small ice cube tray, fill each section with a spoonful of the yogurt mixture. Drop a few blueberries onto the yogurt in each section, pressing them in lightly if needed.
Freezing
- Place the tray in the freezer for at least 2-3 hours or until the bites are solid.
Serving
- Once frozen, pop them out of the tray and store them in a zip-lock freezer bag for future snacking.
Notes
Experiment with different fruits such as strawberries, raspberries, or mango chunks. Consider adding granola or chopped nuts for a crunch. Store in an airtight container for up to two months.
