Base Ingredients
  • 1 cup crushed biscuits Ensure they meet Halal compliance.
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup melted butter
  • 1/2 cup sweetened condensed milk
Layer Ingredients
  • 1/2 cup shredded coconut Divided into six smaller bowls.
  • Food coloring (red, orange, yellow, green, blue, purple) To color the coconut.
  • 1/2 cup mini marshmallows Optional for topping.

Preparation
  1. In a mixing bowl, combine the crushed biscuits, cocoa powder, and melted butter. Stir until it forms a crumbly mixture.
  2. Incorporate the sweetened condensed milk into the biscuit mixture. Mix until combined and then firmly press this mixture into a lined rectangular dish to form the base.
  3. In a separate bowl, take the shredded coconut and divide it into six smaller bowls. Add a few drops of different food colorings to each bowl, mixing until the coconut is brightly colored.
  4. Gently sprinkle the colored coconut over the base, creating a rainbow effect. Start with red, then orange, yellow, green, blue, and finally purple. Press each layer down gently to keep them intact.
  5. Place the dish in the refrigerator to chill for at least two hours or until set.
  6. Once set, top with mini marshmallows for an added layer of fun!
  7. After chilling, slice it into squares or rectangles and serve.

Notes

For a nut-free option, replace biscuits with gluten-free varieties. Ensure to store in the refrigerator for up to one week or freeze for up to three months. Allow thawing in the refrigerator before serving.
