  • 1 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chocolate chips (optional) Add for extra sweetness.

Preparation
  1. Gather all ingredients on a clean countertop.
  2. In a large bowl, combine peanut butter and honey (or maple syrup). Mix until smooth.
  3. Gradually add rolled oats and vanilla extract to the peanut butter mixture. Stir until evenly coated.
  4. If using, fold in chocolate chips.
  5. Line a muffin tin with cupcake liners.
  6. Spoon the mixture evenly into each muffin cup and press down firmly.
  7. Place the filled muffin tin in the refrigerator for at least an hour to firm up.
  8. Once set, peel away the cupcake liners, and enjoy!

Notes

Store in an airtight container in the refrigerator for up to a week. They can be frozen for up to three months.
