Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs Use finely crushed crumbs
  • 1/3 cup sugar
  • 1/2 cup butter, melted Ensure butter is melted
For the filling
  • 2 cans sweetened condensed milk (14 ounces each)
  • 3/4 cup key lime juice Use fresh juice for best flavor
  • 4 large egg yolks At room temperature for smooth mixing
  • 1/4 teaspoon salt
For serving
  • Whipped cream To taste
  • Lime wedges For garnish

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand.
  3. Firmly press the crumb mixture into the bottom of a greased 9x9 inch baking pan. Bake the crust for about 10 minutes until lightly browned.
  4. In a mixing bowl, whisk together the sweetened condensed milk, key lime juice, egg yolks, and salt until well combined.
  5. Pour the filling over the baked crust and return to the oven. Bake for an additional 15-18 minutes until set.
  6. Let the bars cool to room temperature, then refrigerate for at least 3 hours before cutting into squares.
  7. Top each bar with whipped cream and garnish with lime wedges before serving.

Notes

To store, cover tightly or use an airtight container. Bars can be refrigerated for up to 5 days or frozen for up to 2 months. Allow to sit at room temperature for 30 minutes to reheat.
