  • 2 slices slices of bread (white, whole wheat, or sourdough) Your choice of bread.
  • 2 slices slices of cheese (cheddar, mozzarella, or your favorite melting cheese) Choose your preferred melting cheese.
  • 1 large tortilla (flour or whole wheat) Use a large size for easy folding.
  • 1 tbsp Butter For grilling, adjust based on preference.
  • to taste Additional fillings (grilled chicken, black beans, sautéed vegetables, or avocado) Customize based on preference.

Method
 

Preparation
  1. Lay out your slices of bread and cheese, and gather your optional fillings for easy access.
  2. Place a large skillet over medium heat and add a small pat of butter, letting it melt.
Assembling
  1. Place one slice of bread on the skillet. Layer on one slice of cheese, then add your desired fillings, and top with the second slice of cheese. Finally, place the second slice of bread on top.
  2. Once the cheese begins to melt, place the tortilla over the sandwich in the skillet. Carefully flip the sandwich so the tortilla is now on the bottom and the sandwich is on top of it. Press down gently.
Grilling
  1. Allow the sandwich to grill on this side until the bread turns golden brown. Gently flip the whole thing again, allowing the other side to crisp up beautifully.
Serving
  1. Once both sides are crispy and the cheese is thoroughly melted, remove from the heat. Slice in half and serve while hot!

Notes

For substitutions, feel free to swap in your favorite cheeses or add healthy fillings like spinach and bell peppers. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze before grilling.
