Ingredients
  

For the Marinade
  • 1/4 cup soy sauce Low sodium works best
  • 2 tablespoons fresh ger, minced Use fresh for best flavor
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar Apple vinegar can be used as an alternative
  • 2 cloves garlic, minced Use fresh
  • 1 tablespoon sesame oil
  • 1/4 teaspoon black pepper
For the Cod
  • 4 pieces cod fillets (about 6 ounces each)
  • 2 green onions, chopped for garnish
  • 1 tablespoon sesame seeds for garnish

Method
 

Preparation
  1. In a mixing bowl, whisk together the soy sauce, minced ger, honey, rice vinegar, minced garlic, sesame oil, and black pepper.
Marinating
  1. Place the cod fillets in a shallow dish and pour the marinade over the fish. Let it marinate for at least 15 minutes or up to 2 hours in the fridge.
Cooking
  1. Heat a non-stick skillet over medium-high heat. Once hot, add the cod fillets (discard the remaining marinade) and cook for about 4-5 minutes on each side until cooked through.
Serving
  1. Transfer the cod to a serving plate and drizzle some of the cooked marinade over it if desired. Garnish with chopped green onions and sesame seeds.
  2. Serve with jasmine rice or steamed vegetables.

Notes

For the best results, use fresh ingredients. Avoid overcooking the cod to maintain its flaky texture. Store leftovers in an airtight container in the fridge for up to 2 days.
