Ingredients
  

Meat and Rice Mixture
  • 1 pound ground beef (or turkey)
  • 1 cup cooked rice
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
Vegetables and Topping
  • 4 large bell peppers (any colors)
  • 1 cup shredded cheese (cheddar or mozzarella)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground meat until fully cooked. Drain any excess fat.
  3. In a large mixing bowl, combine the cooked meat, rice, diced tomatoes (with their juices), tomato sauce, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well.
  4. Cut the tops off the bell peppers and remove the seeds. Place the peppers upright in a baking dish.
  5. Spoon the meat and rice mixture into each bell pepper until filled to the top.
Baking
  1. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
  2. Remove the foil, sprinkle cheese on top of each pepper, and bake for an additional 10 minutes until the cheese is bubbly and golden.
  3. Let the casserole cool for a few minutes before serving.

Notes

For ingredient substitutions, you can use ground chicken or a plant-based meat substitute. Adjust baking time based on pepper size, and avoid overfilling the peppers.
