Preparation
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground meat until fully cooked. Drain any excess fat.
- In a large mixing bowl, combine the cooked meat, rice, diced tomatoes (with their juices), tomato sauce, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well.
- Cut the tops off the bell peppers and remove the seeds. Place the peppers upright in a baking dish.
- Spoon the meat and rice mixture into each bell pepper until filled to the top.
Baking
- Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
- Remove the foil, sprinkle cheese on top of each pepper, and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Let the casserole cool for a few minutes before serving.
Notes
For ingredient substitutions, you can use ground chicken or a plant-based meat substitute. Adjust baking time based on pepper size, and avoid overfilling the peppers.
