Ingredients
  

For the Dough
  • 2 cups all-purpose flour Can substitute with whole wheat flour for a healthier version.
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon instant yeast Ensure the water used to activate is warm but not too hot.
  • 3/4 cup warm water About 110°F (43°C); this helps activate the yeast.
  • 1 tablespoon olive oil

Method
 

Preparation
  1. In a large mixing bowl, whisk together the flour, salt, sugar, and yeast until well combined.
  2. Pour in the warm water and olive oil into the dry ingredients. Stir using a wooden spoon until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface. Knead for about 5-7 minutes until the dough is smooth and elastic.
  4. Form the dough into a ball and place it in a lightly greased bowl. Cover with a clean towel or plastic wrap and let it rise in a warm place for about 1 hour or until doubled in size.
Baking
  1. Punch down the dough gently to release the air. Divide it into 8 equal pieces and roll each piece into a ball.
  2. Using a rolling pin, flatten each ball into a circle about 1/4 inch thick.
  3. While shaping, preheat your oven to 500°F (260°C). Place a baking stone or an upside-down baking sheet inside to heat up.
  4. Once the oven is preheated, carefully place the pitas on the hot baking surface. Bake for about 5-7 minutes, or until they puff up and have light golden spots.
  5. Remove from the oven and let them cool on a wire rack.
  6. Enjoy them warm or let them cool completely before storage.

Notes

Store leftover pitas in an airtight container at room temperature for 3-4 days. For longer storage, freeze in a zip-lock bag for up to 3 months. Reheat in the oven at 350°F (175°C) for about 5 minutes.
