Preparation
- Place the boneless, skinless chicken breasts at the bottom of your crockpot.
- Season chicken with salt, pepper, garlic powder, and onion powder.
- Pour the cream of chicken soup and chicken broth over the chicken, stirring gently to combine.
- Add the diced onion and frozen mixed vegetables.
Cooking
- Cover the crockpot and set it to low for 6 hours or high for 4 hours. Avoid lifting the lid during cooking.
- About 30 minutes before serving, cut each biscuit into quarters and drop them into the crockpot.
- Cover again and let the dumplings cook for the last 30 minutes.
- Once done, shred the chicken with two forks and mix everything together.
Notes
Ingredient substitutions available: chicken thighs for richer flavor; alternate mixed vegetables as desired. Store leftovers in an airtight container for 3 to 4 days, or freeze for up to 3 months.
