Crockpot Chicken and Dumplings

Ingredients
  

For the Chicken
  • 2 lb boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt
  • to taste Pepper
For the Broth and Vegetables
  • 2 cans cream of chicken soup
  • 1 cup chicken broth
  • 1 medium onion, diced
  • 2 cups frozen mixed vegetables (carrots, peas, and corn)
For the Dumplings
  • 1 package refrigerated biscuit dough Or homemade dumplings if you’re feeling adventurous!

Method
 

Preparation
  1. Place the boneless, skinless chicken breasts at the bottom of your crockpot.
  2. Season chicken with salt, pepper, garlic powder, and onion powder.
  3. Pour the cream of chicken soup and chicken broth over the chicken, stirring gently to combine.
  4. Add the diced onion and frozen mixed vegetables.
Cooking
  1. Cover the crockpot and set it to low for 6 hours or high for 4 hours. Avoid lifting the lid during cooking.
  2. About 30 minutes before serving, cut each biscuit into quarters and drop them into the crockpot.
  3. Cover again and let the dumplings cook for the last 30 minutes.
  4. Once done, shred the chicken with two forks and mix everything together.

Notes

Ingredient substitutions available: chicken thighs for richer flavor; alternate mixed vegetables as desired. Store leftovers in an airtight container for 3 to 4 days, or freeze for up to 3 months.
