Pasta and Vegetables
  • 8 oz pasta (your choice, e.g., rotini or penne) Cook according to package instructions
  • 1 cup cherry tomatoes, halved Ripe and fresh for best flavor
  • 1 cup mozzarella balls, halved or diced Use quality mozzarella
  • 1 cup fresh basil, chopped Fresh basil enhances the flavor
Dressing
  • 1/2 cup mayonnaise Creates creaminess
  • 1/4 cup sour cream Adds richness
  • 2 tablespoons balsamic vinegar Brings acidity and flavor

Method
 

Cooking the Pasta
  1. Boil a large pot of salted water. Add the pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to cool.
Combining Ingredients
  1. In a large bowl, combine the cooked pasta, cherry tomatoes, mozzarella, and chopped basil.
Making the Dressing
  1. In a separate bowl, whisk together the mayonnaise, sour cream, balsamic vinegar, salt, pepper, and Italian seasoning.
Tossing Everything Together
  1. Pour the dressing over the pasta mixture and gently toss until everything is well coated.
Chilling and Serving
  1. Allow the pasta salad to chill in the refrigerator for at least 15-30 minutes before serving to enhance the flavors.

Notes

Storing leftovers in an airtight container in the refrigerator will keep them fresh for about 3 days. No need to reheat, enjoy cold!
