  • 2 pounds fresh spinach You can use frozen, but fresh is best.
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • ½ cup breadcbs For topping

Method
 

Preparation
  1. If using fresh spinach, rinse it under cold water to remove any dirt. In a large pot, add the spinach and a splash of water. Cover and cook over medium heat until wilted, about 3-5 minutes. Drain and chop the spinach, squeezing out excess moisture.
Sauce Preparation
  1. In a separate saucepan, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Sprinkle in the flour and stir to combine, cooking for an additional minute.
  2. Gradually whisk in the heavy cream, ensuring there are no lumps. Continue cooking until the sauce thickens, then stir in the Parmesan cheese, onion powder, salt, and pepper.
Combine and Bake
  1. In a large mixing bowl, combine the chopped spinach with the creamy sauce. Ensure the spinach is well-coated.
  2. Pour the spinach mixture into a greased casserole dish. Sprinkle breadcbs evenly across the top for a crunchy finish.
  3. Preheat your oven to 350°F (175°C) and bake the casserole for about 20-25 minutes or until bubbly and the top is golden brown.
  4. Let it cool for a few minutes before serving. Enjoy!

Notes

For best results, use fresh spinach and avoid sogess by thoroughly draining the spinach. A sprinkle of nutmeg or cayenne pepper can elevate the flavor profile.
