Preparation
- Preheat the oven to 350°F (175°C) and grease a standard 9x5-inch loaf pan.
- In a large mixing bowl, mash the ripe bananas using a fork. Mix in the melted butter until well combined.
- Stir in baking soda and salt. Mix in the sugar, beaten egg, and vanilla extract until fully combined.
- Gently fold in the all-purpose flour until just incorporated—do not overmix!
- In a small bowl, combine the cinnamon and tablespoon of sugar.
- Pour half of the batter into the prepared loaf pan. Sprinkle with half of the cinnamon sugar mixture. Pour the remaining batter on top, followed by the rest of the cinnamon sugar mixture.
- Using a knife or skewer, gently swirl the batter to create a marbled effect.
- Bake in the preheated oven for about 60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
Notes
Store leftover bread in an airtight container at room temperature for up to three days, or refrigerate for up to a week. Reheat slices in the microwave for 10-15 seconds or in the toaster.
