  • 2 cups rolled oats
  • 1 cup chopped hazelnuts
  • 1/2 cup honey or maple syrup Choose one based on sweetness preference.
  • 1/4 cup coconut oil, melted
  • 1 cup chocolate chips or chunks
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper for easy removal.
  2. In a large bowl, combine the rolled oats, chopped hazelnuts, and a pinch of salt. Stir well to ensure everything is evenly mixed.
  3. In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract.
  4. Pour the wet mixture over the dry ingredients and stir until everything is well coated. Then gently fold in the chocolate chips.
  5. Transfer the mixture to the prepared baking pan, pressing it down firmly into an even layer. Bake in the preheated oven for about 15-20 minutes, or until the edges are lightly golden.
  6. Let the bars cool in the pan for 10 minutes before lifting them out using the parchment paper. Allow them to cool completely on a wire rack before cutting into bars.

Notes

For a sweeter flavor, use a combination of honey and maple syrup. Press the mixture firmly into the pan to avoid crumbling. You can swap out hazelnuts with other nuts or add dried fruits.
