Ingredients

For the Chicken Marinade
  • 1 lb boneless, skinless chicken breast, sliced into strips
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
For the Fajitas
  • 1 bell pepper sliced (any color)
  • 1/2 onion sliced
  • Tortillas as needed (flour or corn)
  • Optional toppings sour cream, guacamole, salsa, and shredded cheese

Method

Preparation
  1. In a bowl, combine sliced chicken, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Toss to coat well, then let it marinate for about 10-15 minutes.
Cooking
  1. Heat a skillet over medium-high heat. Add the marinated chicken to the skillet and cook for about 5-7 minutes until browned and cooked through.
  2. Once chicken is cooked, add the sliced bell pepper and onion to the skillet. Continue to cook for another 4-5 minutes until the vegetables are tender and slightly charred.
Serving
  1. Warm tortillas in a separate pan for about 30 seconds on each side or until soft.
  2. To serve, pile the chicken and vegetable mixture onto the warm tortillas and allow everyone to customize their fajitas with their favorite toppings.

Notes

Marinate chicken longer for best flavor. Avoid overcrowding the pan when cooking. Mix different colored peppers for added flavor and visual appeal. Don't skip the toppings for enhanced taste.
