Method

Preparation
  1. Cook the Pasta: Start by boiling a pot of salted water and cook the pasta according to the package directions until al dente. Drain and set aside.
  2. Prepare the Chicken: In a bowl, toss the chicken pieces with Cajun seasoning until well coated.
  3. Sauté the Chicken: Heat the olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove from the skillet and set aside.
  4. Sauté Vegetables: In the same skillet, add the sliced bell peppers and onions. Sauté for about 3-4 minutes until they are tender.
  5. Make the Sauce: Reduce the heat to low and pour in the heavy cream, stirring well to combine. Optionally add a pinch of salt and pepper.
  6. Combine Everything: Add the cooked chicken back to the skillet along with the drained pasta. Toss until everything is coated in the creamy sauce.
  7. Garnish and Serve: Serve the Cajun Chicken Pasta hot, garnished with fresh parsley.

Notes

Top Tips: Adjust Cajun seasoning for spice preference, mix in other vegetables like zucchini or mushrooms, ensure chicken reaches an internal temperature of 165°F, and you can prepare chicken and sauce ahead of time. Store leftovers in the refrigerator for up to 3 days.
