Ingredients
  

Dry Ingredients
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
Wet Ingredients
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 cup butter (to be browned)

Preparation
  1. In a medium saucepan, melt the butter over medium heat. Swirl it gently until it becomes a lovely golden brown color and starts to smell nutty. Be careful not to let it burn.
  2. In a bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until evenly combined.
  3. In another bowl, mix the milk, vegetable oil, and egg together. Stir well!
  4. Pour the wet ingredients into the dry ingredients. Add the browned butter, whisking until just combined. Do not over-mix; a few lumps are okay.
  5. Preheat your oven to 375°F (190°C). Grease a baking dish or cast-iron skillet, then pour the batter in. Bake for 20-25 minutes or until the top is golden and a toothpick inserted comes out clean.
  6. Once baked, let it cool for a few minutes before slicing. Serve warm with your favorite toppings.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven at 350°F (175°C) or in the microwave.
