Ingredients
  

For the Cookies
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs Should be at room temperature
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour Can substitute with whole wheat flour for a nuttier flavor
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup diced apples (peeled and cored)
For the Maple Glaze
  • 1 cup powdered sugar
  • 2 tablespoons maple syrup

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using a hand mixer or stand mixer until light and fluffy.
  3. Add the eggs and vanilla extract to the mixture and beat until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt. Gradually add this dry mixture to the wet mixture, stirring gently until just combined.
  5. Fold in the diced apples into the cookie dough until evenly distributed.
Baking
  1. Using a cookie scoop or tablespoon, drop spoonfuls of dough onto the prepared baking sheets, spacing them apart.
  2. Bake for 10-12 minutes or until the edges are lightly golden.
  3. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Glazing
  1. In a small bowl, whisk together the powdered sugar and maple syrup until smooth. Drizzle the glaze over cooled cookies.

Notes

Store cookies in an airtight container for up to one week. They can be frozen for up to three months. Thaw at room temperature or warm in an oven at 350°F for about 5 minutes.
