Ingredients
  

Zucchini and Filling
  • 2 medium zucchinis
  • 1 cup cream cheese or ricotta cheese (softened) Can substitute with feta or goat cheese for a tangy flavor.
  • 1 tablespoon fresh herbs (like basil or parsley), chopped For enhanced flavor.
  • 1 cup cherry tomatoes, quartered
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Start by slicing your zucchinis lengthwise into thin strips, about 1/4 inch thick. A mandoline slicer works wonderfully for this.
  2. Preheat your grill or a large skillet over medium heat and drizzle a touch of olive oil to enhance the flavor.
  3. Lightly grill each zucchini strip for about 2-3 minutes on each side, just until they soften. Remove from the heat and let cool slightly.
Filling
  1. In a bowl, combine the softened cream cheese or ricotta with chopped herbs, and season with salt and pepper to create a tasty filling.
Assembly
  1. Take a grilled zucchini strip, spread a spoonful of the filling at one end, add a few pieces of cherry tomato, and carefully roll it up. Secure with a toothpick if necessary.
  2. Continue rolling up the rest of your zucchini strips until the filling is used up.
  3. Arrange your Zucchini Roll-Ups on a platter and drizzle lightly with olive oil, garnishing with additional fresh herbs if desired.

Notes

Zucchini Roll-Ups are best enjoyed fresh. Store leftovers in an airtight container for up to three days. Reheat in the oven or microwave until warmed through, but avoid overheating to maintain texture.
