  • 4 medium zucchini, shredded
  • 1 cup pizza sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup bell pepper, diced
  • 1 cup mushrooms, diced
  • 1/2 cup onion, diced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Preparation
  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C), ensuring it’s hot enough to bake your casserole perfectly.
  2. Prepare the Zucchini: In a large bowl, combine the shredded zucchini with a pinch of salt. Let it sit for about 10 minutes to draw out the moisture. Afterward, use a clean dish towel to squeeze out any excess water.
Mixing and Layering
  1. Mix Ingredients: In another large mixing bowl, combine the squeezed zucchini, diced bell pepper, mushrooms, onions, Italian seasoning, and pizza sauce. Mix well.
  2. Layer it Up: In a greased baking dish, layer half of the zucchini mixture. Sprinkle one cup of mozzarella cheese on top. Add the remaining zucchini mixture as a second layer, topping it off with the rest of the mozzarella cheese.
Baking and Serving
  1. Bake: Cover the dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.
  2. Cool and Serve: Once it’s done, let it cool for a few minutes. Cut into squares and serve warm.

Notes

For protein, feel free to add Halal sausage or ground chicken. Change up the veggies based on what you have—spinach, broccoli, or olives would work great. Make sure to squeeze the moisture from the zucchini to avoid a watery casserole.
