Ingredients

  • 2 medium zucchinis, grated
  • 1 cup Panko bread crumbs
  • 1/2 cup grated cheese (feta or cheddar)
  • 2 large eggs
  • 2 count green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1-2 tablespoon olive oil, for frying

Method
 

Preparation
  1. Grate the zucchinis using a box grater. Place them in a clean kitchen towel and squeeze out any excess moisture.
  2. In a large mixing bowl, combine the grated zucchini, bread crumbs, grated cheese, green onions, garlic, oregano, salt, and pepper. Mix until thoroughly combined.
  3. Crack the eggs into the mixture and stir well until the mixture holds together.
  4. Using your hands, shape the mixture into small patties, about 2-3 inches in diameter.
Cooking
  1. In a large skillet, heat about 1-2 tablespoons of olive oil over medium heat.
  2. Once hot, carefully place a few patties in the skillet and cook for about 4-5 minutes on each side or until golden brown and crispy.
  3. Once cooked, place the patties on a paper towel to absorb any excess oil.
Serving
  1. Serve warm with your choice of dipping sauce or toppings!

Notes

To ensure crispy patties, don’t skip squeezing out the excess moisture from the zucchini. Feel free to experiment with herbs and spices.
