  • 1 cup grated zucchini Make sure to squeeze out some of the moisture after grating
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/2 cup vegetable oil Can substitute with applesauce for a healthier option
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips Optional but highly recommended

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8-inch baking pan with cooking spray or line it with parchment paper.
  3. In a large bowl, mix together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  4. In another bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract until just combined.
  5. Gradually add the dry mixture into the wet mixture, stirring gently until incorporated.
  6. Gently fold in the grated zucchini and chocolate chips if using.
Baking
  1. Pour the batter into the prepared baking dish and spread it evenly.
  2. Bake for approximately 25-30 minutes or until a toothpick inserted in the center comes out clean.
  3. Remove from the oven and let them cool before slicing into squares.
  4. Enjoy slightly warm for a gooey experience!

Notes

For perfect brownies, be sure to squeeze out excess moisture from the grated zucchini. Store in an airtight container for up to 3 days, refrigerate for a week, or freeze for up to 3 months. Reheat in the microwave for a few seconds to restore fudginess.
