  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • Zest of 1 large orange zest
  • ¾ cup dried cranberries, roughly chopped

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream the softened unsalted butter and powdered sugar together until light and fluffy (about 3 minutes).
  3. Mix in the vanilla extract until well combined.
  4. In a separate bowl, combine the flour and salt.
  5. Gradually add the flour mixture into the buttery mixture, mixing until just combined.
  6. Fold in the orange zest and chopped cranberries until evenly distributed in the dough.
  7. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, flattening each ball slightly.
  8. Bake the cookies in the preheated oven for 12-15 minutes or until they are lightly golden around the edges.
  9. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

To store, keep cookies in an airtight container for up to one week, or freeze for up to three months. Let thaw at room temperature before enjoying.
