Preparation
  1. In a mixing bowl, whisk together the olive oil, lemon juice, lemon zest, dried oregano, garlic powder, salt, and pepper until fully combined.
  2. Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are thoroughly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 8 hours for more flavor).
Grilling
  1. Preheat your grill to medium-high heat (around 375°F). If using a grill pan, ensure it’s heated and lightly oiled.
  2. Remove the chicken from the marinade, allowing excess to drip off. Place the chicken directly on the grill. Grill for about 6-8 minutes per side or until the internal temperature reaches 165°F and the chicken is beautifully charred.
  3. Once cooked, remove the chicken from the grill and let it rest for 5 minutes. This helps keep the juices inside, ensuring each bite is tender and juicy. Garnish with fresh parsley before serving.

Notes
