  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) sweet corn, drained
  • 1 medium red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 medium avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
Dressing
  • 2 medium juice of limes Freshly squeezed
  • 3 tablespoons olive oil
  • 1 teaspoon cumin
  • to taste Salt and pepper

Method
 

Preparation
  1. Rinse the black beans and sweet corn under cold water, then drain well. Dice the bell pepper, avocado, and red onion, and halve the cherry tomatoes.
Mixing Ingredients
  1. In a large mixing bowl, combine the black beans, sweet corn, diced bell pepper, cherry tomatoes, and red onion.
Making the Dressing
  1. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper. Adjust seasoning as desired.
Combining the Salad
  1. Pour the dressing over the salad and toss gently to combine all the ingredients.
  2. Add the diced avocado and cilantro last to keep the avocado intact and maintain its creamy texture. Toss lightly to mix.
Serving
  1. Enjoy immediately for the best flavor, or chill for about 30 minutes to let the flavors meld together.

Notes

For the best flavors, use fresh ingredients. Store avocado separately if preparing ahead to prevent browning. Customize ingredients as desired, including adding jalapeƱos for heat.
