White Lasagna Soup

  • 1 lb halal Italian sausage or ground turkey
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 cup carrot, diced
  • 1 cup zucchini, diced
  • 4 cups chicken broth
  • 1 can (15 oz) ricotta cheese
  • 2 cups cooked lasagna noodles, broken into pieces
  • 2 cups spinach
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

Preparation
  1. In a large pot over medium heat, add your halal sausage. Cook until browned, breaking it apart as it cooks.
  2. Once browned, add the onion, garlic, carrot, and zucchini to the pot. Sauté for about 5 minutes, or until the vegetables are softened.
  3. Pour in the chicken broth and bring the mixture to a gentle boil.
  4. Once boiling, stir in the ricotta cheese and the cooked lasagna noodles. Let this simmer for roughly 5 more minutes.
  5. Toss in the spinach and let it wilt for another minute or two.
  6. Turn off the heat, then stir in the shredded mozzarella and grated Parmesan. Season with salt and pepper to taste.
  7. Ladle the soup into bowls and garnish with fresh basil and extra cheese if desired.

Notes

Store in the refrigerator for up to 3 days or freeze for up to a month. When reheating, do so gently, adding a splash of broth if needed.
