Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- Add the cold, cubed butter to the flour mixture and mix until it resembles coarse crumbs.
- Gently fold in the white chocolate chips and raspberries, being careful not to crush the berries.
- In a separate bowl, whisk together the cream, egg, and vanilla extract until well blended.
- Pour the wet ingredients into the flour mixture and stir until just combined; do not overmix.
Baking
- Turn the dough onto a lightly floured surface and shape it into a circle about 1-inch thick. Cut into wedges or use a cookie cutter.
- Place the shaped scones on the prepared baking sheet and bake for 15-20 minutes until golden brown.
- Let the scones cool slightly on a wire rack before serving.
Notes
For a healthier twist, substitute half of the all-purpose flour with whole wheat flour. Store in an airtight container for up to 3 days, or freeze for up to 3 months. Reheat in the oven for best texture.
