Ingredients
  

For the cookie dough
  • 1 cup unsalted butter, softened Use 2 sticks
  • 3/4 cup brown sugar, packed
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda Ensure it's fresh
  • 1/2 teaspoon salt
  • 1 cup macadamia nuts, chopped
  • 1 cup white chocolate chips

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
  3. Add in the vanilla extract and eggs, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the flour mixture to the wet ingredients, stirring until just combined.
  6. Gently fold in the chopped macadamia nuts and white chocolate chips until evenly distributed.
  7. Drop spoonfuls of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10 to 12 minutes or until the edges are lightly golden but the center is still soft.
  9. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for thicker cookies. You can also experiment with mixing in other nuts or flavors.
