- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the bite-sized chicken pieces and season with salt, pepper, and onion powder. Sauté until the chicken is cooked through and golden brown (approximately 5-7 minutes).
- Reduce the heat to low. Add the minced garlic to the skillet and cook for about 1 minute, until fragrant. Pour in the heavy cream and stir to combine. Allow it to simmer gently for 2-3 minutes.
- Gradually stir in the shredded white cheddar cheese until the sauce is smooth and creamy. You may need to adjust the heat to ensure it doesn’t boil aggressively.
- Add the drained pasta to the skillet, tossing to coat the pasta evenly in the creamy sauce. Make sure everything is well combined and heated through.
- Once everything is nice and hot, garnish with fresh parsley if desired, and serve immediately. Enjoy!
