Ingredients
  

For the Toast
  • 4 slices slices of bread (e.g., sourdough or ciabatta)
  • 1 tablespoon Olive oil for drizzling

For the Whipped Ricotta
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a medium bowl, combine the ricotta cheese, honey, vanilla extract, and a pinch of salt. Use an electric mixer or a whisk to whip the mixture until it becomes light and fluffy, which should take about 2-3 minutes.
  2. While you whip the ricotta, preheat your oven to 400°F (200°C) for toasting.
  3. Arrange the slices of bread on a baking sheet and drizzle a little olive oil on top of each slice.
Toasting the Bread
  1. Place the baking sheet in the preheated oven and toast the bread for about 5-7 minutes, or until it turns golden and crispy. Keep an eye on it to avoid burning!
Assembling the Toast
  1. Once the bread is toasted, spread a generous layer of the whipped ricotta mixture on each slice.

Notes

If you have leftovers, store the whipped ricotta in an airtight container in the refrigerator for up to three days. Keep the toasted bread separate to maintain its crunch.
