  • 4 cups seedless watermelon, cubed Fresh, ripe watermelon for best flavor.
  • 1/2 cup fresh mint leaves, roughly chopped Can substitute with other herbs if desired.
  • 1 juice lime Fresh lime juice adds a zesty tang.
  • 2 tablespoons honey Add more or less to taste, can substitute with agave syrup for vegan option.

Preparation
  1. Start by thoroughly washing the watermelon. Using a sharp knife, cut it in half and scoop out the flesh with a melon baller or cut it into bite-sized cubes.
  2. Rinse the fresh mint leaves under cold water and pat them dry with a paper towel. Roughly chop the mint leaves.
  3. In a large mixing bowl, combine the cubed watermelon and chopped mint.
  4. Squeeze the fresh lime juice over the watermelon and mint. Drizzle in the honey while gently tossing the mixture.
  5. Taste the salad and adjust the flavors by adding more lime juice or honey if desired.
  6. Scoop the salad into a serving bowl or individual portions, garnishing with extra mint leaves.

Notes

Make the salad close to serving time for best freshness. Store leftovers in an airtight container in the refrigerator for up to 3 days.
