- Start by thoroughly washing the watermelon. Using a sharp knife, cut it in half and scoop out the flesh with a melon baller or cut it into bite-sized cubes.
- Rinse the fresh mint leaves under cold water and pat them dry with a paper towel. Roughly chop the mint leaves.
- In a large mixing bowl, combine the cubed watermelon and chopped mint.
- Squeeze the fresh lime juice over the watermelon and mint. Drizzle in the honey while gently tossing the mixture.
- Taste the salad and adjust the flavors by adding more lime juice or honey if desired.
- Scoop the salad into a serving bowl or individual portions, garnishing with extra mint leaves.
