Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef, breaking it apart with a spatula. Once no longer pink, add in taco seasoning according to the package instructions and stir until well combined.
- In a large bowl, mix the seasoned beef with black beans and corn.
- In a greased baking dish, spread a layer of tortilla chips on the bottom. Pour the beef mixture over the chips evenly.
- Sprinkle the shredded cheddar cheese generously over the meat and bean layer.
- Place the baking dish in the oven and let it bake for about 20 minutes, or until the cheese is bubbly and golden.
- Once out of the oven, let it cool for a few minutes, then top with chopped lettuce, diced tomatoes, and a dollop of sour cream.
- Serve warm and enjoy!
Notes
To avoid sogginess, serve immediately post-baking. Leftovers can be refrigerated for up to 3 days or frozen for one month. Reheat in a preheated oven at 350°F for 15-20 minutes.
