  • 1 pound ground beef (ensure it’s Halal)
  • 1 packet taco seasoning (check for Halal certification)
  • 1 bag tortilla chips (about 10-12 ounces)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 2 cups shredded cheddar cheese
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes
  • 1 cup sour cream

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef, breaking it apart with a spatula. Once no longer pink, add in taco seasoning according to the package instructions and stir until well combined.
  3. In a large bowl, mix the seasoned beef with black beans and corn.
  4. In a greased baking dish, spread a layer of tortilla chips on the bottom. Pour the beef mixture over the chips evenly.
  5. Sprinkle the shredded cheddar cheese generously over the meat and bean layer.
  6. Place the baking dish in the oven and let it bake for about 20 minutes, or until the cheese is bubbly and golden.
  7. Once out of the oven, let it cool for a few minutes, then top with chopped lettuce, diced tomatoes, and a dollop of sour cream.
  8. Serve warm and enjoy!

Notes

To avoid sogginess, serve immediately post-baking. Leftovers can be refrigerated for up to 3 days or frozen for one month. Reheat in a preheated oven at 350°F for 15-20 minutes.
