  • 1/4 cup cocoa powder

  • 1/4 cup vegetable oil
  • 2 eggs

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Preparation
  1. Preheat the oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  2. In a blender, combine the cottage cheese and sugar. Blend until smooth, about 1-2 minutes.
  3. Add in the cocoa powder, flour, vegetable oil, eggs, vanilla extract, baking powder, and salt. Blend until all ingredients are well combined and the batter is smooth.
  4. Pour the batter into the greased baking pan, spreading it evenly with a spatula.
  5. Bake for 20-25 minutes. To check for doneness, insert a toothpick into the center; it should come out clean or with a few moist crumbs.
  6. Let the brownies cool in the pan for at least 10 minutes before slicing them into squares.

Notes

For substitutions, Greek yogurt can be used instead of cottage cheese; the texture may vary. Check the brownies a minute or two early to avoid overbaking. Ensure thorough blending to avoid clumps in the brownies.
