- Preheat the oven to 350°F (175°C) and grease an 8x8 inch baking pan.
- In a blender, combine the cottage cheese and sugar. Blend until smooth, about 1-2 minutes.
- Add in the cocoa powder, flour, vegetable oil, eggs, vanilla extract, baking powder, and salt. Blend until all ingredients are well combined and the batter is smooth.
- Pour the batter into the greased baking pan, spreading it evenly with a spatula.
- Bake for 20-25 minutes. To check for doneness, insert a toothpick into the center; it should come out clean or with a few moist crumbs.
- Let the brownies cool in the pan for at least 10 minutes before slicing them into squares.
Notes
For substitutions, Greek yogurt can be used instead of cottage cheese; the texture may vary. Check the brownies a minute or two early to avoid overbaking. Ensure thorough blending to avoid clumps in the brownies.
