Preparation
- Cook the rice noodles according to package instructions until they are al dente. Drain and rinse them under cold water to prevent sticking. Set aside.
- If using chicken, grill or sauté it until fully cooked and golden brown, about 5-7 minutes. If opting for tofu, pan-fry until crispy.
- While the noodles and protein are cooking, wash and julienne your chosen vegetables.
Mixing and Assembling
- In a mixing bowl, whisk together soy sauce, fish sauce, and chili paste.
- In a large bowl, layer the cooked noodles, followed by the protein, fresh vegetables, and herbs. Drizzle with the sauce and toss everything gently.
- Top with crushed peanuts for an additional crunch, and serve with lime wedges on the side.
Notes
You can easily swap chicken for grilled shrimp or tofu for a vegetarian option. Prepare all ingredients beforehand to ensure smooth assembly.
