  • 8 oz Rice noodles Cooked al dente
  • 1 lb Chicken or tofu Your choice of protein, grilled or sautéed
  • 2 cups Mixed vegetables Julienne cut carrots, bell peppers, and cucumber
  • 1 cup Fresh herbs Mint, cilantro, and basil
  • 1 whole Lime Cut into wedges
Sauce Ingredients
  • 3 tbsp Soy sauce Low-sodium for a healthier option
  • 2 tbsp Fish sauce Adds depth of flavor
  • 1 tbsp Chili paste Adjust according to spice preference
Garnish
  • ½ cup Peanuts Chopped for garnish (optional)

Method
 

Preparation
  1. Cook the rice noodles according to package instructions until they are al dente. Drain and rinse them under cold water to prevent sticking. Set aside.
  2. If using chicken, grill or sauté it until fully cooked and golden brown, about 5-7 minutes. If opting for tofu, pan-fry until crispy.
  3. While the noodles and protein are cooking, wash and julienne your chosen vegetables.
Mixing and Assembling
  1. In a mixing bowl, whisk together soy sauce, fish sauce, and chili paste.
  2. In a large bowl, layer the cooked noodles, followed by the protein, fresh vegetables, and herbs. Drizzle with the sauce and toss everything gently.
  3. Top with crushed peanuts for an additional crunch, and serve with lime wedges on the side.

Notes

You can easily swap chicken for grilled shrimp or tofu for a vegetarian option. Prepare all ingredients beforehand to ensure smooth assembly.
