Ingredients
  

For the Filling
  • 1 cup rice Any long-grain rice will work.
  • 2 cups milk Substitute with almond milk or oat milk for dairy-free options.
  • 1/2 cup sugar Can be substituted with honey or maple syrup.
  • 3 pieces eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup butter, melted
  • 1 pinch salt
For the Crust
  • 1 pie crust pie crust Can use store-bought or homemade.

Method
 

Preparation
  1. Rinse 1 cup of rice under cold water until the water runs clear.
  2. Boil 2 cups of water or milk in a saucepan, add the rice, and cook according to package instructions until tender. Remove from heat and let cool.
Cooking
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the cooked rice, milk, sugar, eggs, vanilla extract, melted butter, and a pinch of salt until well combined.
  3. Place the pie crust into a 9-inch tart pan or pie dish, pressing it tightly against the bottom and sides.
  4. Carefully pour the rice mixture onto the crust, ensuring it is evenly distributed.
  5. Bake in the preheated oven for 30-40 minutes, or until the filling is set and the top is lightly browned.
  6. Remove from the oven and let it rest for about 10 minutes before slicing. Serve warm or chilled.

Notes

Consider topping with fresh fruits like strawberries for added freshness, or sprinkle some cinnamon for a warm twist. Make sure to grease your pie dish for easier serving.
