  • 1/2 cup hummus Feel free to use store-bought or homemade.
Vegetables
  • 1/2 cup cucumber, sliced Choose a fresh cucumber for the best crunch.
  • 1/2 cup bell peppers, sliced Any color bell peppers will work.
  • 1/4 cup carrots, shredded Shredded for easier incorporation.
  • 1/4 cup spinach or lettuce Choose fresh, tender greens.
  • to taste salt and pepper Adjust seasoning according to preference.

Method
 

Preparation
  1. Wash your fresh vegetables.
  2. Slice the cucumber and bell peppers into thin strips.
  3. Shred the carrots and rinse your spinach or lettuce.
Assembly
  1. Place a large tortilla wrap flat on a clean surface.
  2. Spread the hummus evenly across the tortilla, leaving about an inch at the edges.
  3. Layer the sliced cucumbers, bell peppers, shredded carrots, and spinach across the hummus-covered tortilla.
  4. Sprinkle a pinch of salt and pepper over the veggies.
  5. Starting at one edge, roll the tortilla tightly around the filling.
  6. Cut the rolled wrap in half diagonally and serve fresh.

Notes

For variations, feel free to swap out the veggies. Store leftovers in an airtight container for 1-2 days, but avoid freezing.
