  • 1 tablespoon balsamic vinegar
  • to taste Salt and pepper Add to taste.

Method

Preparation
  1. Cook the veggie burgers according to package instructions on medium heat for about 4-5 minutes on each side until heated through and slightly crispy on the edges.
  2. While the burgers are cooking, wash and chop the mixed greens (lettuce, spinach, and kale) into bite-sized pieces and place in a large bowl.
  3. Toss in the halved cherry tomatoes, sliced cucumber, and thinly sliced red onion into the bowl of greens.
  4. In a small bowl, combine olive oil, balsamic vinegar, salt, and pepper. Whisk until emulsified. Drizzle this mixture over the salad.
  5. Once the veggie burgers are cooked, slice them into strips or cubes and add them on top of the salad.
  6. Sprinkle diced avocado for a creamy finish.
  7. Gently toss all the ingredients to coat in the dressing and serve immediately for the freshest taste.

Notes

Dress the salad just before serving to avoid wilting. If you have leftovers, store in an airtight container for up to two days, keeping the dressing separate.
