  • 4 pieces sweet potatoes Choose firm, unblemished sweet potatoes for the best results.
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled You can substitute with goat cheese or a dairy-free alternative.
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • 1/4 teaspoon red pepper flakes (optional) Add for a bit of heat.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly. Prick them all over with a fork to allow steam to escape during baking. Line them on a baking sheet and bake in the preheated oven for about 45-60 minutes or until fork-tender.
  3. While the sweet potatoes are baking, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about a minute until fragrant. Add the fresh spinach, cooking until wilted, about 2-3 minutes. Season with salt, pepper, and optional red pepper flakes.
  4. Once the spinach has wilted, remove it from the heat and stir in the crumbled feta cheese until everything is well combined.
  5. After the sweet potatoes are cooked and slightly cooled, cut them in half lengthwise. Gently mash the insides with a fork, creating a small well in the center. Spoon the spinach and feta mixture into each sweet potato half.
  6. Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes, allowing the flavors to meld.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. They can also be frozen for up to 3 months. To reheat, place them in the oven at 350°F (175°C) for about 20 minutes or until heated through.
