Preparation
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly. Prick them all over with a fork to allow steam to escape during baking. Line them on a baking sheet and bake in the preheated oven for about 45-60 minutes or until fork-tender.
- While the sweet potatoes are baking, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about a minute until fragrant. Add the fresh spinach, cooking until wilted, about 2-3 minutes. Season with salt, pepper, and optional red pepper flakes.
- Once the spinach has wilted, remove it from the heat and stir in the crumbled feta cheese until everything is well combined.
- After the sweet potatoes are cooked and slightly cooled, cut them in half lengthwise. Gently mash the insides with a fork, creating a small well in the center. Spoon the spinach and feta mixture into each sweet potato half.
- Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes, allowing the flavors to meld.

Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. They can also be frozen for up to 3 months. To reheat, place them in the oven at 350°F (175°C) for about 20 minutes or until heated through.
