  • 1 cup granulated sugar
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened coconut oil and granulated sugar. Use a whisk or hand mixer to blend until fluffy. Add almond milk and vanilla extract, mixing until combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Gradually add the dry mixture into the wet ingredients until a dough forms. Avoid overmixing.
Shaping and Baking
  1. Scoop about a tablespoon of dough, roll it into a ball, and place them on a parchment-lined baking sheet. Flatten slightly.
  2. Bake for 10-12 minutes or until the edges are lightly golden.
  3. Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough for 30 minutes before shaping and baking. You can add chocolate chips or nuts for extra texture.
