- In a medium saucepan, combine the almond milk, cornstarch, sugar, vanilla extract, and salt. Whisk everything together until smooth and there are no lumps.
- Place the saucepan over medium heat and stir continuously to prevent the mixture from sticking.
- As the mixture heats, it will thicken. Continue to whisk until it reaches a pudding-like consistency, typically around 5-7 minutes.
- If using, stir in the coconut oil for an extra creamy texture.
- Remove from heat and pour into serving dishes. Cover with plastic wrap to prevent a skin from forming. Chill in the refrigerator for at least 2 hours before serving.
Notes
Store in the refrigerator for up to 4 days or freeze for up to a month. Reheat gently and do not overheat.
