  • 2 cups almond milk Can be substituted with soy or oat milk.
  • 1/4 cup cornstarch
  • 1/2 cup sugar
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon coconut oil Optional for added creaminess.

Preparation
  1. In a medium saucepan, combine the almond milk, cornstarch, sugar, vanilla extract, and salt. Whisk everything together until smooth and there are no lumps.
  2. Place the saucepan over medium heat and stir continuously to prevent the mixture from sticking.
  3. As the mixture heats, it will thicken. Continue to whisk until it reaches a pudding-like consistency, typically around 5-7 minutes.
  4. If using, stir in the coconut oil for an extra creamy texture.
  5. Remove from heat and pour into serving dishes. Cover with plastic wrap to prevent a skin from forming. Chill in the refrigerator for at least 2 hours before serving.

Notes

Store in the refrigerator for up to 4 days or freeze for up to a month. Reheat gently and do not overheat.
