Method
Prepare the Filling
- In a large bowl, combine the crumbled tofu, chopped chives, soy sauce, minced garlic, and grated ginger. Mix everything well until it’s nicely combined.
Fill the Wontons
- Lay a wonton wrapper on a clean surface. Place about a teaspoon of the tofu mixture in the center. Using your finger, wet the edges of the wrapper with a little water. Fold the wrapper in half to create a triangle shape, pressing the edges together to seal. You can also pinch the edges for a decorative look! Repeat until you’ve filled all the wrappers.
Make the Broth
- In a large pot, heat the vegetable broth over medium heat. Once it’s simmering, add chili paste or flakes to taste, stirring well to incorporate. You can make it as spicy as you like!
Cook the Wontons
- Gently add the wontons to the broth. Allow them to simmer for about 5–7 minutes or until they float to the top, indicating they are cooked through.
Serve and Garnish
- Ladle the hot broth and wontons into bowls, garnishing each with freshly chopped green onions.
