- Begin by carefully slicing each Medjool date down the center. Remove the pit if it hasn't been already. This will create a pocket for your delicious filling.
- In a mixing bowl, combine the vegan cream cheese, diced strawberries, and powdered sugar. Use a spatula to gently mix all the ingredients until they form a smooth, creamy mixture.
- Spoon the strawberry cream filling into each opened date, ensuring they are generously filled.
Melting the Chocolate
- In a microwave-safe bowl, combine the dark chocolate and coconut oil. Heat in 20-second intervals, stirring in between, until the mixture is completely melted and smooth.
Dipping and Chilling
- Using a fork, dip each stuffed date into the melted chocolate, ensuring they are fully coated. Allow any excess chocolate to drip off before placing them on a parchment-lined tray.
- Refrigerate the tray for about 10-15 minutes or until the chocolate has fully hardened.
Notes
For optimal freshness, store any leftovers in an airtight container in the refrigerator for up to five days. They can be frozen for up to three months. Thaw in the refrigerator overnight, avoiding the microwave.
