Ingredients
  

For the cobbler
  • 4 cups peaches, sliced (fresh or frozen) Make sure to slice those peaches thinly for the best results!
  • 1 cup flour
  • 1 cup almond milk Can be substituted with oat milk or coconut milk.
  • 1 cup sugar
  • 1/2 cup coconut oil, melted Can be substituted with vegetable oil.
  • 2 teaspoons baking powder Ensure it's fresh for best results.
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. If using fresh peaches, slice them into thin wedges. For frozen, let them thaw and drain any excess liquid.
  3. In a large mixing bowl, combine flour, sugar, baking powder, cinnamon, and a pinch of salt. Stir well.
  4. Mix in the almond milk and melted coconut oil until you have a smooth batter.
  5. Pour the sliced peaches into a greased baking dish, then evenly distribute the batter over the top.
Baking
  1. Place in the preheated oven and bake for about 30-35 minutes or until the top is golden brown and a toothpick inserted comes out clean.
  2. Once done, let it cool for a few minutes. Serve warm, ideally topped with some vegan whipped cream if you like.

Notes

Allow it to cool completely before covering and placing it in the refrigerator. It keeps well for up to 3 days. For longer storage, freeze for up to a month. Reheat in the oven or microwave at lower heat to maintain texture.
