- Begin by pressing the tofu for about 15 minutes to remove excess moisture.
- Chop your veggies into bite-sized pieces while the tofu is pressing.
Marinating
- In a mixing bowl, combine the pressed tofu cubes, olive oil, soy sauce, garlic powder, smoked paprika, salt, and pepper. Mix well.
- Let it marinate for around 10-15 minutes.
Assembly
- Thread the marinated tofu and assorted veggies onto skewers, alternating for a colorful presentation.
- Avoid overloading the skewers.
Grilling
- Preheat your grill to medium heat.
- Cook the assembled skewers for about 10-15 minutes, turning occasionally until the tofu is golden and the veggies are tender.
Serving
- Remove the kebabs from the grill and let them rest for a couple of minutes.
- Serve hot with your favorite sauces or dips.
Notes
Feel free to swap out the veggies based on availability. Storing leftovers: Airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat on a skillet for 5-7 minutes.
