Ingredients
  

For the Kebabs
  • 1 block firm tofu, cubed Press for 15 minutes to remove excess moisture.
  • 1 each red bell pepper, chopped
  • 1 each zucchini, sliced
  • 1 each red onion, chopped
  • 1 cup cherry tomatoes
For the Marinade
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Method
 

Preparation
  1. Begin by pressing the tofu for about 15 minutes to remove excess moisture.
  2. Chop your veggies into bite-sized pieces while the tofu is pressing.
Marinating
  1. In a mixing bowl, combine the pressed tofu cubes, olive oil, soy sauce, garlic powder, smoked paprika, salt, and pepper. Mix well.
  2. Let it marinate for around 10-15 minutes.
Assembly
  1. Thread the marinated tofu and assorted veggies onto skewers, alternating for a colorful presentation.
  2. Avoid overloading the skewers.
Grilling
  1. Preheat your grill to medium heat.
  2. Cook the assembled skewers for about 10-15 minutes, turning occasionally until the tofu is golden and the veggies are tender.
Serving
  1. Remove the kebabs from the grill and let them rest for a couple of minutes.
  2. Serve hot with your favorite sauces or dips.

Notes

Feel free to swap out the veggies based on availability. Storing leftovers: Airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat on a skillet for 5-7 minutes.
