Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
Wet Ingredients
  • 1/2 cup coconut milk Ensure it's dairy-free
  • 2 tablespoons coconut oil Melted
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the all-purpose flour, sugar, salt, and baking powder. Whisk until well blended.
  3. In another bowl, mix the melted coconut oil, coconut milk, and vanilla extract. Stir until combined.
  4. Pour the wet mixture into the dry ingredients, using a spatula to combine until a soft dough forms.
  5. On a lightly floured surface, knead the dough for about 2-3 minutes until smooth.
  6. Divide the dough into 6 equal pieces, roll each into a ball, and then flatten into a round patty about 1/2 inch thick.
  7. Place the patties on your prepared baking sheet and bake for about 15-20 minutes or until golden brown.
  8. Allow to cool for a few minutes before serving.

Notes

Substitute coconut milk with almond or oat milk if needed. Letting the dough rest for 10 minutes after kneading can improve texture.
