Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the all-purpose flour, sugar, salt, and baking powder. Whisk until well blended.
- In another bowl, mix the melted coconut oil, coconut milk, and vanilla extract. Stir until combined.
- Pour the wet mixture into the dry ingredients, using a spatula to combine until a soft dough forms.
- On a lightly floured surface, knead the dough for about 2-3 minutes until smooth.
- Divide the dough into 6 equal pieces, roll each into a ball, and then flatten into a round patty about 1/2 inch thick.
- Place the patties on your prepared baking sheet and bake for about 15-20 minutes or until golden brown.
- Allow to cool for a few minutes before serving.
Notes
Substitute coconut milk with almond or oat milk if needed. Letting the dough rest for 10 minutes after kneading can improve texture.
