Ingredients

For the Crust
  • 1 cup all-purpose flour
  • 1/4 cup coconut oil Can substitute with vegan margarine or non-dairy butter.
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 2-3 tablespoons cold water Add gradually until the dough comes together.
For the Filling
  • 1/2 cup fruit jam (your choice) Ensure it is Halal-compliant.
Optional Toppings
  • Fresh fruit for topping Can add as desired.

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, coconut oil, powdered sugar, and salt. Mix well until crumbly.
  3. Gradually add cold water, one tablespoon at a time, until the dough comes together. It should be smooth but not sticky.
  4. On a floured surface, roll the dough out to about 1/8 inch thick. Use a cookie cutter or the rim of a glass to cut out circles.
  5. Gently press each circle into a greased muffin tin, shaping them into little cups that will hold the jam.
  6. Spoon about a tablespoon of fruit jam into each cup, being careful not to overfill.
Baking
  1. Place the muffin tin in the oven and bake for 15-20 minutes, or until the edges are golden brown.
  2. Let the tartlets cool in the tin for 10 minutes before gently removing them.
  3. Serve warm or at room temperature, and enjoy!

Notes

Experiment with different flavors of fruit jam and toppings such as fresh fruit or powdered sugar. Store in an airtight container in the refrigerator for up to 3 days or freeze for up to one month. Reheat in the oven at 350°F (175°C) for 5-10 minutes to restore crispness.
