Crust Ingredients
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup coconut oil (melted) Can be substituted with vegan butter as a Halal-friendly alternative.
  • 1/4 teaspoon salt
Filling
  • 1/2 cup vegan jam of your choice Ensure the jam is vegan by checking the label.

Method
 

Preparation
  1. In a large mixing bowl, combine the all-purpose flour, powdered sugar, and salt. Mix well until combined.
  2. Pour in the melted coconut oil and mix until the dough starts to form. You may need to use your hands for this step!
  3. Wrap the dough in plastic wrap and refrigerate for about 10-15 minutes.
  4. While the dough chills, preheat your oven to 350°F (175°C).
  5. After chilling, flour your surface lightly and roll out the dough to about 1/4-inch thick. Use a round cutter to cut out circles for the tartlet bases.
  6. Gently press the dough circles into a muffin tin or tartlet pan, forming an even layer. Poke a few holes in the base with a fork to prevent bubbling.
  7. Spoon about a tablespoon of your chosen vegan jam into each tartlet shell.
  8. Place the muffin tin in the preheated oven and bake for 15-20 minutes or until the edges are golden.
  9. Allow the tartlets to cool for a few minutes before transferring them to a wire rack. Serve warm or at room temperature.

Notes

Store tartlets in an airtight container for up to 3 days at room temperature. To freeze, wrap well. To reheat, place in a preheated oven at 350°F (175°C) for about 5 minutes.
