  • 2 cups all-purpose flour or gluten-free flour
  • 1 cup sugar or coconut sugar for a healthier option
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon

  • 1/2 cup plant-based butter or margarine
  • 1 cup almond milk or any plant-based milk
  • 1 teaspoon vanilla extract
Fruits
  • 3 cups plums, pitted and sliced opt for ripe plums for maximum flavor
Toppings

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a springform pan or line it with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and cinnamon. Stir well to mix them thoroughly.
  3. In a separate bowl, cream together the plant-based butter and sugar until it becomes light and fluffy.
  4. Gradually add the almond milk and vanilla extract to the butter mixture, stirring continuously until everything is well combined.
  5. Pour the dry ingredients into the wet ingredients and mix until just combined. Avoid over-mixing to keep your cake fluffy.
  6. Gently fold in the sliced plums until they are evenly distributed throughout the batter.
  7. Pour the batter into the prepared pan and smooth it out.
Baking
  1. Bake in the preheated oven for 35–40 minutes or until a toothpick inserted into the center comes out clean.
Serving
  1. Once baked, allow the cake to cool before transferring it to a serving plate.
  2. Dust with powdered sugar if desired.
  3. Slice and serve this delightful cake alongside your favorite beverages or vegan ice cream.

Notes

Store leftovers wrapped in plastic wrap in the refrigerator for up to 5 days. Freeze individual slices in an airtight container for up to 3 months. To reheat, microwave for 10–15 seconds or warm in an oven preheated to 300°F (150°C) for about 10 minutes.
