Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In another bowl, mix the almond milk and melted coconut oil together until well incorporated.
- Pour the wet mixture into the dry ingredients. Stir with a wooden spoon or spatula until a dough begins to form. Use your hands to knead the dough gently for a couple of minutes until smooth.
- Lightly flour a clean surface and roll the dough out into a rectangle about 1/4 inch thick.
- Combine the ground cinnamon and brown sugar in a small bowl and evenly sprinkle this mixture over the rolled-out dough.
- Starting from one long edge, carefully roll the dough into a tight log-shaped cylinder. Use a sharp knife to slice the log into 1-inch thick pieces.
- Place the cinnamon rolls in a greased baking dish, leaving space in between each roll. Bake in the preheated oven for 20-25 minutes or until golden.
- Allow the rolls to cool slightly before drizzling with your favorite vegan glaze or enjoying them plain.
Notes
These rolls can be refrigerated for up to 3 days or frozen for up to 3 months. For reheating, microwave for about 15-20 seconds or reheat in the oven at 350°F (175°C) for about 5-7 minutes.
