Ingredients
  

Dough Ingredients
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup almond milk Can substitute with any plant-based milk
  • 1/4 cup coconut oil, melted Ensure it's melted beforehand
Filling Ingredients
  • 2 tablespoons ground cinnamon
  • 1/4 cup brown sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, mix the almond milk and melted coconut oil together until well incorporated.
  4. Pour the wet mixture into the dry ingredients. Stir with a wooden spoon or spatula until a dough begins to form. Use your hands to knead the dough gently for a couple of minutes until smooth.
  5. Lightly flour a clean surface and roll the dough out into a rectangle about 1/4 inch thick.
  6. Combine the ground cinnamon and brown sugar in a small bowl and evenly sprinkle this mixture over the rolled-out dough.
  7. Starting from one long edge, carefully roll the dough into a tight log-shaped cylinder. Use a sharp knife to slice the log into 1-inch thick pieces.
  8. Place the cinnamon rolls in a greased baking dish, leaving space in between each roll. Bake in the preheated oven for 20-25 minutes or until golden.
  9. Allow the rolls to cool slightly before drizzling with your favorite vegan glaze or enjoying them plain.

Notes

These rolls can be refrigerated for up to 3 days or frozen for up to 3 months. For reheating, microwave for about 15-20 seconds or reheat in the oven at 350°F (175°C) for about 5-7 minutes.
