Preparation
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, brown sugar, and salt until well combined.
- Pour in the almond milk, vegetable oil, and vanilla extract. Mix gently until just combined, being careful not to overmix; a few lumps are perfectly fine!
- In a small bowl, mix the coconut sugar and an additional tablespoon of cinnamon to create the sweet swirl for your pancakes.
- Preheat a non-stick skillet or griddle over medium heat. If needed, add a tiny bit of oil to the surface.
Cooking
- Pour 1/4 cup of pancake batter onto the skillet. Quickly add a tablespoon of the cinnamon swirl mixture on top of the pancake.
- Swirl gently with a knife or toothpick to create a marbled effect. Cook for about 2-3 minutes until bubbles form on the surface.
- Flip and cook for another 2-3 minutes, or until golden brown.
- Continue the process with the remaining batter, stacking the pancakes on a plate as they cook. Serve hot with maple syrup, fresh fruits, or your favorite plant-based yogurt!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month. To reheat, pop them in a toaster or skillet over low heat, adding a splash of almond milk for freshness.
