Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar
  • 1/8 teaspoon salt
Wet Ingredients
  • 1 cup almond milk (or other plant-based milk)
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract
Cinnamon Swirl
  • 1/4 cup coconut sugar (for cinnamon swirl)
  • 1 tablespoon cinnamon (for cinnamon swirl)

Method
 

Preparation
  1. In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, brown sugar, and salt until well combined.
  2. Pour in the almond milk, vegetable oil, and vanilla extract. Mix gently until just combined, being careful not to overmix; a few lumps are perfectly fine!
  3. In a small bowl, mix the coconut sugar and an additional tablespoon of cinnamon to create the sweet swirl for your pancakes.
  4. Preheat a non-stick skillet or griddle over medium heat. If needed, add a tiny bit of oil to the surface.
Cooking
  1. Pour 1/4 cup of pancake batter onto the skillet. Quickly add a tablespoon of the cinnamon swirl mixture on top of the pancake.
  2. Swirl gently with a knife or toothpick to create a marbled effect. Cook for about 2-3 minutes until bubbles form on the surface.
  3. Flip and cook for another 2-3 minutes, or until golden brown.
  4. Continue the process with the remaining batter, stacking the pancakes on a plate as they cook. Serve hot with maple syrup, fresh fruits, or your favorite plant-based yogurt!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month. To reheat, pop them in a toaster or skillet over low heat, adding a splash of almond milk for freshness.
