- Add the minced garlic and grated ginger, cooking for an additional minute until fragrant.
Cooking
- Stir in the curry powder and cumin, cooking for another minute to toast the spices.
- Add the diced butternut squash and stir well to coat it in the spiced mixture.
- Pour in the coconut milk and vegetable broth. Bring the mixture to a gentle simmer.
- Once simmering, add the drained chickpeas and stir everything together.
- Allow it to simmer for about 15-20 minutes, or until the butternut squash is tender.
- Season with salt and pepper to taste.
- Ladle the curry into bowls, garnish with fresh cilantro, and serve hot.
